I love this flavourful recipe as it’s warming, hearty and healthy too! Created by Chef Kevin Doherty. I use it as a foundation for my own creation.
I love that this can be in the slow cooker all day, but you can also freeze any left overs in portions for easy reheating later. It’s even better on day 2 & 3. You can eat it as is like a soup with crusty bread, or, I like to add the “crust” by getting those individual phyllo pastry shells.
I also made the follow tweaks: added a clove of garlic, a cup of chopped ham and 1/2 cup of red pepper; used 32oz of chicken broth (the entire 1L container) and no water, 4Tbps of cornstarch, plus I add my own individual shell at the end!
