I read somewhere that its okay to have not so healthy eating days as long as you bookend them with healthy eating days! So after a birthday celebration of rich foods and desserts I needed a really healthy eating day.
Baked Perogies with red pepper & brie
Cooked these perogies in red pepper and Brie, then top with cheddar and baked! And I added a dollop or 2 of sour cream.

Now that is a fantastic Reuben! Thank you very much to Joe’s deli for an amazing lunch that hit the spot perfectly. Each flavour stood it’s own yet blended so well together. Love the sauerkraut and their russian dressing!
