Vegetables for breakfast!

With all the fresh vegetables readily available I want to incorporate vegetables into my every meal. Poached eggs on garden veggies is a great and simple transition for incorporating veggies into your breakfast because it’s fast, warm and I still get to have my favourite poached eggs! 


I’m sharing this not as a step-by-step recipe, but as an inspiration for you to use whatever local ingredients you have access to. I sautéed onions and garlic in grape seed oil, added cubed zucchini picked fresh from the garden along with chopped peppers and spinach. After a few minutes I added half a tomatoe to the middle of the sauté pan.

Once completed, transfered to a pasta bowl, squished the tomatoe down a bit (so easily) to create a nest for the 2 poached eggs. Then topped the dish with freshly grated Parmesan and sea salt.

I am so happy on every level that I was able to start the day off with such a delicious and healthy meal!

    This looks divine Marsha. I had never really thought about how yummy it would be to have vegetables in the morning with eggs, but you have inspired me to try it. Such a healthy way to start the day. Thanks for this 🙂
