Summer dinner pouch

Whether you are camping, BBQing for yourself or guests this quick all-in-one dinner pouch has been a proven crowd pleaser and it’s also great as leftovers too.

The foundation is grilled smoked sausages with sauerkraut and mini-potatoes halved. From there add any summer veggies you’d like.

1) grill smoked sausages on the BBQ first to give the skin grill marks, then cut up
2) cut the mini new potatoes in half and toss them in oil and salt & pepper
3) in double tin foil add the sliced grilled sausages and the sauerkraut
4) then add the oiled potatoes
5) top with veggies: I like cherry tomatoes, green beans, baby or sliced carrots, chunks of zucchini (keep pieces big so they don’t go mushy)
6) fill free to add any herbs, garlic or spices you desire
8) fold up the tin foil to create a pouch easy to flip
7) with the BBQ around 350/400F grill the tin foil pocket filled with your sausages, veggie and potatoes for 20mins a side.

Benchmark’s quality & presentation’s outstanding

Benchmark is Niagara college’s NOTL restaurant and they live up to their motto of 5 star quality for 3 star prices.

The value I got for the $20 “trust us” 3 course tasting menu (selected by the apprentice chefs) is outstanding. (Or $25 with wine or beer.)

First up was a green salad with smoked salmon and scallop terrine. Excellent. Loved the light dressing.

The main was a buttermilk chicken sandwich with homemade slightly crispy fries. Fries are amazing. I love that it comes out on a hot plate. What a great combo with the Dijon mustard, coleslaw and garlic aioli.

From the dessert picture, do I have to say anymore? The Lemon bar was quite tasty. But you’ll need a knife or your fingers as it crumbled when I stuck a fork in it.

Overall what a great meal and awesome value too. I’d definitely recommend any foodies to check this out. I know I’ll be back for sure.

Abigail’s Tea House exceeds expectations

Visiting Abigail’s Tea House in St. George, Ontario, for the first time was quite emotional for me as this destination had been on my list for awhile. Lorene and Ivan’s love and passion hit me straight away as I entered the front door, but I instantly felt at home. I had to take a minute to soak it all in and remind myself to breath in order to become grounded.

Summer baking: no bake chocolate peanut butter cookies

Who the heck wants to bake in the summer? Not me, I don’t want to be turning my oven on heating the house up… But I still want to make & eat baked goods.

They are super easy and super fast to make. Oh and they taste very good too! I feel like they are at least a little bit healthy because of the oatmeal!?!

Chai tea Latte at home… Brought to you by Rishi

Rishi Tea sent me their organic loose leaf Masala Chai tea so that I could try making Chai tea latte at home, and I love it!

The description on the package of this black tea is quite true, the flavouring is healthy and strong as all the various flavours pop in your mouth. It’s super easy to make, with instructions right on the side of the package.

I followed the 3 easy instructions and it turned out perfect (I love my tea strong and their recommendation of 2Tbsps per cup is just right)
1) In a pot mix loose leaf tea with water and bring to a boil
2) add milk, bring to a simmer and steep 3 mins
3) add honey, strain and serve

I really love being able to see all the ingredients and the aromas were invigorating as a stirred the mixture. I love the made by me touch as well, the feeling you are almost making it from scratch even though it’s as simple as boiling water and adding milk.

Also, this chai tea latte pairs amazingly with Dad’s oatmeal chocolate chip cookies!
